You will be able to taste our products in our very short supply chain lunches and you will be able to learn all the secrets of ancient grains in the kitchen by taking part in our cooking class!

This experience will lead you on a journey from the grain of wheat to the table, passing through the kitchen. The experience begins with a welcome aperitif with our ancient grain beer and focaccia, where you will discover how focaccia is prepared with ancient
grains. The experience continues with a guided tour of the castle mill.

During the visit you will discover with your own eyes how our ancient grains are transformed into pasta, witnessing the stone grinding and bronze drawing. An experience that will show you the world of cereals, flour and pasta as you have never seen it. With the freshly stone-ground flour we will move to the restaurant kitchen, adjacent to the mill, where you will take part in the cooking lesson.
During the cooking lesson you will learn to prepare the classic pici with garlic sauce, the bread soup and the traditional cantucci. At the end of the cooking lesson you can sit comfortably at the table to taste the fruit of your labor and enjoy a delicious four-course lunch.

Our history has its roots in the sharecropping tradition and the passion and love for the land has been handed down from father to son for generations, in fact the mill today stands in the building that once housed the agricultural tool shed of the sharecropper grandparents, so like our farmhouses, they are located in farmhouse buildings that once housed granaries, stables and homes, renovated according to the tradition of the Sienese countryside.

The fresh pasta laboratory is located at Spedaletto Castle, an ancient grange which in the Middle Ages preserved the wheat produced in Val d’Orcia and offered hospitality to pilgrims traveling along the Via Francigena.

During the guided tour of the mill you will discover with your own eyes how our ancient grains are transformed into pasta, witnessing the stone grinding and bronze drawing. An experience that will show you the world of cereals, flour and pasta as you have never seen it.
To conclude the visit, all you have to do is taste! You can enjoy a very short supply chain lunch at our restaurant right next to the castle mill.

The new production plant is located 2km from Monticchiello, is surrounded by our fields and overlooks the Val d’Orcia with a splendid view of Pienza.
After a brief introduction on Ancient Grains we will begin the journey from the first phase of processing: sifting, the cleaning process of the cereals that is carried out before grinding. The visit continues through the storage area up to the mill with millstones, where you will assist in the grinding and discover the differences between the various types of flour. This leads us to the last phase of the cycle, in
the pasta factory where we produce our bronze-drawn pasta from ancient grains
and slowly dried at low temperature.
To conclude the visit, all you have to do is taste! You can enjoy a very short supply chain lunch at our restaurant in the charming Spedaletto Castle, about 6 km from the pasta factory.

Of course, a little training doesn’t hurt, after all the Val d’Orcia is famous for its hills, but you don’t have to be an expert cyclist, just get on your bike and enjoy the beauty that surrounds you.

We suggest a fairly simple itinerary that will take you to discover unique panoramas across Pienza, Monticchiello and the hills of the Val d’Orcia.

Itinerary

Visiting the Val d’Orcia by bike Departure from our Agriturismo Castello di Spedaletto in the direction of Bagno Vignoni, after about 2 km of asphalt road turn right and take the dirt road that will take you to Pienza. From here you will be in uncontaminated nature, surrounded by cultivated fields while the road begins to climb slightly. After approximately 7 km you will arrive in Pienza and you can enjoy your first well-deserved break by visiting the splendid village.

From here we continue for the second stage towards Montepulciano along the asphalt road. After traveling about 4 km you will see Palazzo Massaini on your left, a very small village on a hill, at this point be careful, after passing the sign for Palazzo Massaini turn left onto the dirt road and continue towards Monticchiello. Now it’s simple, the road is very beautiful, panoramic but above all downhill.

Enjoy the road and the view for another 6 km up to Monticchiello and save some energy for the last climb. You deserved the second stop, congratulations! Take a tour of the small village and quench your thirst. At this point you return to the base, get off and follow the asphalt road until the end of the tour at the Agriturismo Castello di Spedaletto. Come and visit this fantastic land full of wonders!

A labyrinth of paths through the Val d’Orcia, a land that is not made to be crossed hurry. Paths and routes of all kinds invite the visitor to move slowly, savoring what he sees, to make a stop in front of houses, gullies, cypresses enjoying landscapes, monuments and all the details of a unique landscape.
You travel by bicycle, on foot or horseback, with a group of friends, alone or with your love, the ancient streets of Val d’Orcia offer countless routes. Not necessarily have to be experienced walkers or cyclist: even if you are in Val d’Orcia by car can park for a few hours and set off in the picturesque trails of southern Tuscany. I recommend, however, bring a backpack, a pair of comfortable shoes, hat for protection from the sun or wind jacket in case of rain.

SAN CASCIANO DEI BAGNI
The thermal waters of San Casciano dei Bagni are used for thousands years for their therapeutic properties. On the territory of San Casciano there are 42 hot springs, with a capacity of 5 million and 800 thousand liters per day that are dispersed in the countryside. Some of these sources are used by Fonteverde Tuscan Resort & Spa, while others go to feed the typical stone tank which are located a few hundred meters from the historic center. These are free, very attractive for bathrooms evening or night. San Casciano dei Bagni is located about 35km from our farm Spedaletto Castle.

Rapolano Terme is a beautiful town that is located in the area of Crete Senesi, about 40Km from agriturismo Spedaletto Castle.
At Rapolano Terme you can find two excellent spas: Terme di San Giovanni and the Spa Antica Querciolaia. Here you will find various types of spa treatments, but also wellbeing and relaxation.

PETRIOLO

Nature, art and history! The thermal baths of Petriolo are located along the banks of a river, a short walk from the Natural Reserve of the Basso Merse. Very particular the remains of the wall which makes the Baths of Petriolo an exceptional example of terme fortified. As you move away from the shore thermal water mixes with that of the river and reach ever lower temperatures. Petriolo are just over 50Km from our farm Spedaletto Castle.

SATURNIA
Going further south in Maremma you can reach the baths perhaps best known in all of Tuscany, the beautiful Saturnia Spa, to reach them from the farm you will have to drive for about 60Km, but it’s worth it.
The Thermal Falls of Saturnia have arisen naturally, by a travertine rock, excavated from the waterfall of thermal sulphurous waters. Waterfalls famous for their beauty, are formed by small natural pools that are filled with water that flows continuously from high waterfall, creating a very picturesque setting, very tourists and locals choose this place to relax and enjoy and relax tranquility.
